Potato protein is produced in the process of obtaining starch from potato tubers. The finished product is gray powder of typical smell of dried potato protein and moisture content of no more than 10%.

Potato protein has a high, over 80%, total crude protein content, digestible protein makes over 70% of dry matter. It is an easily digestible, high-value vegetable protein. Potato protein is a valuable component of animal feed mixtures, especially used in the initial period of rearing young animals and birds, and an excellent substitute for animal protein.
